if you do the claying of the piston valve reliefs with a mockup of the engine, i bet the valves dont even nick the silly puddy. the main concern with the shaving of the heads is how i effects compression ratios.
1mm shaving would raise the compression ratio near 1 point (thats near 7ccs)

all you really need to do, is take a box end wrench, and lever down the valves and measure how far they go down before they hit the pistons. (clay is to see where they hit too) if that number is .3" or greater, you have nothing to worry about .

Billiant video, but edited so you only see three out of four strokes for no apparent reason

Nice visual.

When this head is done, Will they bake it in an oven for a number of hours to stress relieve it ? I think it would need something along those lines.
