I noticed somebody selling a battery tray on ebay, and it has me wondering if this is a reasonable item to replace, ie get a small one instead of my giant one to make room for the passenger side exhaust pipe to run between the tray and tranny.

If you're willing to cut & weld, anything's replaceable. '77-'78, the battery box bolts in. Changing it on a later car is a bit more involved.
