how do I tell if I have Full Leather interior?

Erkka I would love to have all those leather pieces but have NEVER seen them. Full leather, as an option, meant dash; seats; centre console; cassettebox; cassetebox lid; glovebox; a-pillars; rear quarters; rear ac or rear console; sunroof panel; roof panel; visors front-rear; door panels; door inserts; door armrests; 5spd shift boot/****.
Many cars had leather seats; door panels; door inserts; rear quarters; cassettebox; cassettebox lid; 5spd shift boot/****. Those were not full leather.
Later cars also had leather trim elsewhere, like handbrake.
Usually if you have the leather dash, your car is full leather. WARNING again. I have seen VINYL dash and quarters and other parts shipped as LEATHER because they were covered in stitched vinyl.

I have seen several cars which had dash and center console while they don't have glovebox, a-pillars, rear quarters, rear console etc made from leather. Dash and console were obviously available without including other pieces. Also I think dash and console alone is much more common than cars which have your longer list.
I think stantard leather was seats, door inserts, steering wheel and shift boot (and handbrake handle on later cars). Anything beyond that was individual option or part of the larger package. Some pieces can have been even standard on some markets but they were not included on all cars.

I have a US 1983 with the full leather package (I have the original window sticker that says so). I have leather seats, rear console, dash, headliner, glove box, cassette case, A pliars and around the rear side windows. I think that is it. I hope this helps, your US 1981 should be similar to my US 1983. I can only imagine what it would cost to replace it all, if I were trying to make a show car. This spring I probably will have shop do some minor repairs on a few of the above leather covered items that are starting to show there age.

I have leatehr headliner, visors, a pillars, rear 3/4 panels but i dont have an option code for this on the car.
The top portion of the doors are also leather, i believe i have seen a few 90's that are just vinyl. Again no option code for this though.

I think first question to sort out is, what is definition of full leather? AFAIK there isn't definitive answer to this. Early cars had less possible options than last ones. Does definition change for different MY? In later years there were dozens of individual parts which could be covered with leather. Some cars had dash and center console but very few had pod. Having all three and some other large parts done in leather was just a start.
so what exactly is "full leather" for 1990?

I am in the UK and have a 90 S4 with almost full leather, and I mean the whole interior is classic grey leather including handbrake, except for the pod which is black and must be leatherette as there is no stitching. I have only seen one other car with full leather which was a GTS with black interior.
I also have a metallic beige 79 that I have owned since 1980, it has brown leather dash, armrests, glovebox, rear centre section, both sides of rear seats, and front leather seats with pasha cloth, which seems to be the norm on this colour car.

My 83 Euro lists 'Leather to Sample' on the invoice, and includes all the above for FULL leather....plus a leather horn pad, and a white leather cargo cover, complete with white zip. The white dash is a bit of a pain on bright sunny days..
In fact it would be easier to say the only non-leather bits are the carpeted areas - floor, console sides, and bottoms of the doors.

My '89 UK 928 S4 with black interior and red piping has a leather console, headliner, dash, rear quarter panels, pillars etc. It has no option codes for anything interior-related other than lumbar support for drivers seat. The leather headliner is neat.. I have no sunroof
I'd call mine "full leather". Cars like Dave's and John's above I'd list with "additional factory exclusive leather options" as thats the list the picture you posted above shows.
From the few other UK cars I've seen here in Australia, this amount of leather seems to have been standard for UK cars.

For reference my 90 GT has leather doors, leather roof pillars, leather headlinerincluding sunroof and trim, sun visors front/rear, cargo area cover, rear quarter trim, rear a/c, armrest and a whole host of additional factory leather exclusive options and rootwood trim.
It doesn't have a leather dash, pod or center console. Actually that and the buttons on the dash are the only things not covered in leather/wood.
