I removed the passenger's side emergency brake shoes altogether.
I jacked up one side and manually spun the drivers' side rear wheel and it spun with nominal effort. The passenger's side rear wheel was on the ground and couldn't move. Same situation vice versa. I assume this means I have LSD and it's working properly?

I suggest you lift both wheels off the ground to verify whether or not you have an LSD.

If one rear wheel spins with very little effort with the other one on the ground you most likely do not have limited slip.
I doubt that was your issue at all though, I'm under the impression you had either a brake caliper hang up or the parking brake was dragging at lower speeds. I moved Porvette the other day for the first time in a couple months and the parking brake was locked up, felt just like what you were talking about...like the car was up against something and was loading the drivetrain and pushing against it. Put it in reverse and gave it some quick throttle and clutch and it popped the parking brake loose.

Since that emergency brake cable seems easy to "catch" on something I'm wondering if there is an alternative to an emergency brake such as a type of lightweight block that can be grabbed out of the trunk and secured next to the wheels to prevent rolling?

Went to lunch with some guys from work at Hooters a few weeks back, there was a mid 80's f150 with block on a wheel made me laugh. I think a 944 like that might bring a tear to my eye.
