I'm pretty sure the part number is, 999-067-026-07.
Pelican says it's an M4x25
My PET catalog says it's M5x40x25.
Also, I'm an idiot, and I don't understand how thread pitches I usually see (like .8 or .5) make sense with the 40 or 25 in the PET.
What would be the thread pitch on the M5x40x25 bolt be?

M5= bolt size (in MM)
25= thread pitch (per 100cm)
40= shank length (cm)
An 8/10'' thread pitch would not apply. Are you possibly thinking of bolt hardness specs? These are usually refered to by grade. grade 8, grade 9, ect.
If you are referring to the bolt that physically attaches the mirror to the door IIRC it is a M4. You my want to call Pelican to verify...Dave

On Mcmaster they are noted in .7mm metric pitch.
Or .8mm for M5 bolts.
I think you mean mm and not cm though, a 40 cm bolt would be very long.

I would guess that since this is a cap screw with an unthreaded section that 40 is the total length (in mm) and 25 is the threaded length (in mm).
Metric threads are often available in "fine" or "coarse". But looks like ISO pitch for M5 is 0.8mm only. For M4 it's 0.7mm. I did find reference to an M5-0.5 but that would be really fine and not likely for a normal fastener.
