What are the current 968 coupe values? Specifically a 54k mile car with all books and records in Excellent condition? Not highly optioned, power seats, 17" Cup II wheels with fresh rubber, 6spd, painted rear spoiler. Maintenance is up to date with new timing belt and water pump.

968 values are tricky because every day there are fewer and fewer of them. The market goes up and down depending on if suddenly people try to sell their 968s or if there's a few months with very few on the market. A car is always worth whatever someone will pay.
I haven't watched the market that closely for a while, but I think somewhere between 11 and 14k. With 968s, color does matter as 968 shoppers are picky. Red won't command any premium (though it is one of the best colors). Something like rare or metallic will be worth more. What color is the exterior and interior?

just like any car, it's worth what someone will pay.
i'd pay more for the 6spd manual 968 than a tiptronic. i'd also pay more for something other than red or black. starting with a base of 9g(seems fair for a 968 around 100k) add 1500 for low miles, maybe 500 for the tires/maintance being up to date, lack of options(like m030, m474, or lsd) keep it down, each of those would probably add 250-500. i'd say 11g for what you're looking at.
colors would depend, i'm sure far fewer people would want wimbleton green than red or blue, but you never know.
