Deleting Power Steering Pulley
I searched for an answer and came up with two, and even those didn't sound 100% confident.
1. Remove the crank bolt and remove pulley. Install washer and bolt.
2. Remove the crank bolt and remove pulley. Install bolt.
What size washer would I use and do I even need one?

The crankshaft bolt already has a special washer. Why do you want to delete the power steering pulley? Is the v-belt drive pulley one assembly for both the power steering v-belt drive and the alternator v-belt drive.? Did you have all of the steps necessary to delete the power steering pulley?

Trigger wheel goes between the crank pulley and the balance shaft belt pulley - dont see a need to cut it even if you had power steering. If removing power steering pulley still I would use the washer and torque the crank bolt to spec (so you have oil pressure).

Yes the power steering pulley gets squeezed between the crank pulley and crank bolt. Remove the PS pulley and just torque the crank bolt to required spec with washer (if I remember its 155 ft lbs?) Many early model 944s came without power steering or this pulley.

Also, set the engine flywheel to TDC on cylinder #1 and verify that the camshaft gear is set to match mark on camshaft gear housing if one is removing the bolt. The flywheel lock must be installed to remove the crankshaft bolt and also on restall.

OK, so I am assuming that you have all the tools and procedure to remove and reinstall the crankshaft bolt. On my race car the power steering pulley was removed and the alternator pulley replaced with a micro groove drive belt. The alternator pulley was changed to a micro groove pulley, 5 ribs I believe.
