On my NA i would spray on some degreaser made for cleaning engines/enginebays, let it sit for a few minutes and hose it off with the garden hose. The only thing I covered up was the distributer (plastic bag). Before hosing off I would scrub a bit with a toothbrush on camcover and intake. The engine would look very nice.
I would not use high pressure water.

I'd like to clean the engine of my 951, but I'm not sure if there is anything besides the distributer is should cover up. It's much easier to spot an oil leak with a clean engine.

I use Simple Green, a paintbrush, a garden hose, and time. I don't cover anything up, not even the distributor, and I've never had problems. Once it ran a bit rough until it warmed up, but that's it.

S100 Cycle Cleaner is the best engine-cleaner I've found. Removes the toughest grime you'll ever find. Spray some onto a warm engine, scrub with a nylon brush to get the crevices and corners. Hose off and your engine will look brand-new. Then after it's dried, spray on some Armor-All for that factory look.

Super 11! only available at detail supply stores. it's a neon-green kool-aid lookin liquid, do a 50/50 dilutian, and it cleans anything. I use it on my wheels, my engine, gettin bugs off the windsheild, and to clean my carpets. it's great stuff.
