DOes anyone know the length of a 1977 930 dipstick. Seems to be taking more oil than the required amount to hit the dipstick full level.

What do you consider the required amount?
First, there's no need to fill the reservoir all the way to "max" on the dipstick. Halfway between "min" and "max" is perfect.
Second, make sure, when you check oil level, that the front oil cooler is hot to the touch, the engine is idling, and the car is parked on level ground.
Third, if you removed the old oil while the car was still warm, it might take as much as 11.5 quarts to reach half-way on the dipstick. The recommended process is, after the changing oil & filter, to add 10 quarts and drive the car until it's up to full temp. Then follow #2 above.

I just bought an '84 3.2 Euro and when I check the oil (at operating temperature, idiling) the car will stall when the filler cap is removed--unless I pinch the oil vent hose with vice grips. Its like the thing is drawing too much air when the oil tank cap is removed. What do you guys think is the cause?

I was thinking that there must have been some restriction valve/device in the hose somewhere that the previous owner removed (now I wonder why they would). I looked at a diagram and think that I see the restrictor that you reference. Is it hard to get to ?

Something wrong there Al, all that should happen is a slight adjustment to the rpms when you take off the cap.

No, just feel for the restrictor by squeezing the hose. If it's new, then most likely the hose was replaced and the PO forgot to transfer the restrictor over to the new hose. Not hard to replace.
