Where are you located? There is a local shop here in Campbell that does a good job of recovering for about $700. You also may have a local upholstery shop near you that can do it. I've heard good things about this place:

+1 on Dan at CarsInc. you can even do a swap if you need a top right away. He is the guy for our Targas

Dave Brown in Boulder, CO (303.499.0110) also does an excellent job and has loaners available. Had mine redone 2 years ago. Still extremely pleased with the results. Went with the Rough grain and had to provide measurements at the top mounting points--was local so not an issue. With a new headliner and foam, made a big difference.
I have also simply replaced the top covering with one of the kits available thru Pelican or others sources a number of years ago. Easy to do and an inexpensive fix.
