I've never been to a track like this in my life. Am I watching someone drive in a way that only someone familiar with the course should/could drive? I mean, how is one to know what's ahead and how much braking is required to avoid being an idiot? When it's too late it is just too late.

They did a pretty thorough analysis at Apex (site where the driver works) of driving with and without helmet with standard 3-point belts and no HANS and was pretty convincing that a helmet in many cases would be more dangerous on balance (increase to severity of neck injuries, etc.). They don't go without helmets casually - it's a considered risk (while you may disagree with the conclusion - it wasn't done with a careless attitude). However, I would feel more safe in a closed car on the Ring. And they do wear helmets when harnesses and HANS are available.
Misha is a nice guy and quite knowledgable. For those who haven't been, the Ring is an unparalleled motoring adventure

the next year I did my homework and watched multiple videos of full laps and I had a mental map of the track that improved my line and times ... its been a work in progress ever since!
it is a truly unique track with many corners, many blind, altitude changes, camber changes and very very little runoff, while it is no loner the "green hell" that Jackie Stewart experienced its not your average track!
here are a couple of laps from last year's PSDS Masters...

He's no novice. Has lots of GT4 content. Spyder is no less capable.
He ripped it.

I realize he was not out to set the fastest lap but I was a bit surprised to see him shifting the PDK. I thought PDK sport was better on its own (generally).
