These are all in PEC cars, they lined up about 40 when we were there for all the different sessions and choices.
Optional insurance is available when you register. I bought it!
During my session, there were about 10 teams out at the same time. We never had any traffic on the handling course (aka track) and there were never more than 3 students at any one exercise. If things bunched a bit, we left for a different exercise then came back later. The instructors do a fantastic job of managing the flow and I don’t think I missed out on anything with lead-follow and radios (and I have lots of in car experience as a DE student).
Check out the PEC site for pricing of different cars, you can add on to your PEC delivery experience. My wife will do our upcoming Cayenne delivery, my daughter will drive a base 911, and I may do a 718 variant to compare to my Boxster. Might as well make a full day of it!

It actually may be the best bang for your buck option that Porsche offers. Like period.
The option itself is around $650. Here's what it includes- a tour of the PEC, an in-depth vehicle orientation with a delivery specialist, a 90-minute experience in a Porsche on the driver development track, and lunch at Restaurant 356. (Plus some cool porsche gear/swag)
If you broke that down to a la carte pricing:
Delivery orientation: (free I guess)
90 Min driving experience: depending on what car you purchase it varies, but let's say it averages about $600 (x2 if you have a guest)
Lunch: Easily $200 dollars worth of steak/fish/apps/dessert
Porsche swag: $120
If you were to do it individually it would be over double the delivery experience costs.

Non-driving guests have a perfect vantage point from the elevated balcony / patio. They can easily see most of the property and a few exercises are very close (kick plate, slalom / brake). The cafe is right there and there is both shade and sun. My wife and daughter did not complain when I was doing a Turbo S / GT3 comparo for 90 minutes. If you register multiple drivers, you can coordinate the time slots depending on car availability.
When we picked up our Cayenne, they bent the rules a bit and took all three of us out to the off road section for about 45 minutes, then my wife finished with 45 minutes lead-follow on the asphalt sections.
The insurance is like a $5k deductible for $50 or so. It’s an option when you are booking.

was it an easy process to have car delivered to dealership and to do the PEC at a later time?

car was due to arrive early Jan and the earliest PECLA date they had was in March as I recall ... so the choices were:
- take a PECLA date in March
- cancel PECLA delivery and take delivery from the dealership
- postpone PECLA and take delivery from the dealership
I picked the last one, they setup the delivery from PoE/PDI to the dealership and gave me a contact to arrange a "makeup" visit at a later date...
I think as long as the car has not landed in the US its easy to make this change and re-direct to the dealership ...
it made a lot of sense rather than have it sit for 2 months somewhere awaiting PECLA
