You will find that almost all dealer inventory cars are loaded up with $15-30k in options. Your best bet is going to be finding a dealer that has a new 2021 allocation that you can build to your own spec.
The other option is watching the used market. There was a 0 option gt4 in the rennlist marketplace here a few weeks back.

Why impossible? Give deposits to 3-4 dealers nearest to you and put yourself on their allocation lists. They'll start calling sooner than you'd expect. List are full of people that have deposits with multiple dealers so when they get their allocation or if they plain change their minds, then they withdraw from the other lists and you move up. In the meantime, scan the cars on offer (new or barely new) and pounce if you see something to your liking. Plenty of time till Spring.
