I am considering a set of 17' wheels for my 951 but I'm not sure if the fronts will work with that offset. The car they came off had bilstein coil overs instead of the m030 struts so the seller is not sure they will fit stock suspension...

I was going to try to run a 225/45 tire up front since I already have a new set, but can buy new tires if needed since 9" is stretching that size some....

Accoring to the wheel/tire size calculator on rimsntires website going from a 16x7 et 60 to 17x9 et 56 brings the back spacing from 6.3" to 7.2".

Will that be ok?

Post this in the 944 turbo & 924/931/944/951 sections and you will have better results.
