Default Interesting uses for the instrument panel...

If you had one of the 3.5" instrument panel holes open, what would be interesting (that exists) to put there?

Consider that the OEM gauge items are already spoken for in the other locations already.

What to put in 1 or 2 empty places?

If it's an auto, then a transmission fluid level gauge with the hot and cold levels marked.

One of the nav screens from a late model Porsche would be cool.

You can get configurable gauges - this would allow you to have multiple functions installed - can easily scroll through them.

e.g. https://www.plxdevices.com/Automotiv...sors-s/108.htm

Porsche sport chrono clock with the reset controlled by a trip odometer reset button. Or a 911 oil temp/oil pressure gauge, and use the pressure gauge for fuel pressure.

Both gauge faces would need to be rescreened in 928 font, if you cared to make it look the look.
