The more the contrast between exterior and interior color, the more I recommend painting the backs to body color. Doesn't make sense with a black/black or silver/gray car. In your case the grey can be a bit drab so the yellow brightens up the interior. Wrapping is a good option as long as quality is commensurate with paint. That being said I know Waldemar offers the painted back option when building the seats; not sure if he does wrapping to.
