I assume you're in k-w. I ride an R6, so fun can happen anywhere, but have bought a 997s, and would like to do some reasonable (not having to immediately run!} fun in a car. DM me if you have some ideas/want to meet up when the weather gets nicer

Biased, as we have cottages in Honey Harbour, but Honey Harbour road, and White's fall road are pretty epic. On a bike, best to run in medium one way to check for marbles/gravel before getting too aggressive.
24a through cambridge/blair to paris is hoot, but it's a high speed run.

The river road from Peterborough to Lakefield is a nice drive. You can then reverse the drive and stay on the east side of the Otonabee river (part of Trent-Severn system) and go all the way down to the Lift Locks before ending back in Peterborough. Do not out brake yourself on the bends - no guardrails to keep you out of the river.

Who's got a good Toronto to Ottawa route? I'm thinking about taking a day off and driving up early in the morning and returning by 4. So can't be too scenic.

Leaving at sunrise (6:30'ish) and returning by 4:00 doesn't leave a lot of time to venture off the 400 series roads. (call it 4 hours each way). I have taken the scenic route to Ottawa from NE GTA multiple times but usually give myself around 6 hours to get there.

If you can get up towards Bancroft and then Denbigh and up to Griffith. Maybe take the 7 to Peterborough and upto Buckhorn and the 507 to Gooderham and the 503 to Tory Hill...then onto Bancroft. This is a pretty epic stretch:

I could leave a bit earlier, an option is to leave say 5:30 and blast to Ottawa on 400 series. Have some coffee, eats, snap some car pics and take the scenic way back in the daylight.

Good call. Stating the obvious but just watch for deer, particularly at dusk. Not as much of an issue in April as it is in May/June and of course nowhere near as much of an issue as the Fall.

The following links pretty comprehensively list the best roads in Eastern Ontario. Some are a bit far for a one-day from the GTA, but I have driven many of them (and all that are within 2 hours of Ottawa) and they are awesome.

The Opinicon Road between Hwy 15 and the Perth Road is probably the best low speed road that I have found. Beware that there is pretty much nowhere to pass on the entire stretch so weekends would be unadvised. This road at Chaffey's Lock also closes periodically to allow boats through the lock.
