I use:
GoPro Hero3 (White Edition)
AiM Solo DL (with CAN+ hookup)
RaceRender2 to overlay data on video
Here's an example of the output:
Getting great sound is always hard. Best I ever did was a Contour+ with an external mic that I taped to my rear bumper:

GoPro Hero 3 Black edition with the WiFi remote. The 3 cameras are easily started and stopped from the remote attached to my dash with the special mount. A bit too much contrast effect added in Final Cut Pro though...
