What about the Porsche Sport Driving School at Barber Motorsports Park? I am dfinitely biased, but would think a Porsche enthusiast may prefer driving new Porsches rather then Chevys or Mazdas.
If your experience is limited to a couple autocrosses, the 2 day performance school would be perfect. If you have extensive driving experience, you may want to go straight to the masters course.

Day 3 they set up an actual mini rally stages where you must combine all the different techniques learned to get thru the stages.
Day 4 is an advanced day where they take you out on a real rally stage to see if you qualify for a provisional rally license.
I did the 3 day program in 2009, I am going back next week for day 4, I am hoping to shoot some in car footage of my event.....

I would do this. You would definitely remember your 40th. I have done 6 days of closed course driving at the Ring and this program offers you the same experience. The days of driving the Nurburgring may be numbered so no time like now to get it off your bucket list.
