It sounds like an electrical issue. I am not familiar with later model 911s, but temp gauges are usually just voltmeters reading a sender on the engine. So the gauge goes wacky, it's usually a bad contact on the gauge or sender, a shorted or crossed wire somewhere, a bad sender, or a bad gauge. It seems like something in the gauge if you can make the problem go away by knocking on the gauge. If you have a voltmeter, you can confirm this by checking the voltage coming through the wires to see if it's consistent. It would be even better to do this while the gauge is pegging, if possible. If the voltage is the same while the gauge is acting up vs. when it's OK, you can confirm that the gauge is the problem.

Thanks Scott for the thoughts.

Practically speaking, how would you rig up the voltmeter to test the readings while driving around waiting for the problem to re-appear?

Anyone alese dealt with this before? It's Crickets over on the 993 forum. Well, Crickets and lot's of passionate dialogue about silver hood crests...
