You don't need a gym. The Red Bull guide is good. I use some of their exercises but include planks and side planks for core. Holding a weight like a steering wheel and turning it as previously mentioned is part of my routine. This will date me but I use "Charles Atlas Dynamic Tension" exercises for my neck. Basically you push against your head with your hand from all sides. Larger steering wheel is also a no brainer.

Also touched on, look at your ***-to-seat interface. You're gonna end up doing even more work if you're not well-secured in the set... and a generic race seat IMO isn't good enough for a car with this level of performance, consider a custom poured bead seat if you don't already have one.
While all the comments about hitting the gym will be helpful. Your seating is a big issue it looks like.
In a high-G car sliding around even slightly does a couple things. It bruises you and beats you up. It makes you tense up a LOT of muscles and in turn you death grip the wheel. At points in your video it looked like you would loosen up your grip and stretch your fingers. That's a pretty good sign that you are holding on too tight. NJMP mostly right turn?? You are going to put most of the stress on the left side of your body and that goes in line with the pain you mentioned.
And that all goes back to a sweet molded seat. Bead Seat or SFI Foam.
