I have been told that retubbing a car the "correct" way (not talking about getting it done overnight using ducttape and tie-wraps so you can still run the race) takes about 2 weeks. So the 100h quote seems to match that.

Mine took 110 MAN HOURS to get back to perfect factory condition.

Doesn't take 2 weeks ..with a experienced crew of 3/4 people can be done from say 4pm to 11am next day ..!
I can see un experienced crew taking that long alrite ..our team re shelled a car and works driver Nick Tandy went straight out and on his 3rd lap was bang on the times ..like it never happened
For big Carrera cup teams it's no big deal ..just another day at the office

4pm to 11am, let's count: that's 19 hours with 4 people. Do this times 4 which gives you nearly 80 hours. And this is under full "race weekend" pressure, so things have to go fast (and some shortcuts will be taken, you can be sure about that, since the last % of fit and finish take proportionally more time to do).
So in normal workshop conditions counting 100-110 hours to do the job properly still sounds like a correct number.
Now of course, if your workshop charges by the hour instead of hour * number of people on the car I might consider changing shop with my car
