No your VIN option code and "window sticker" can not be adjusted after the vehicle leaves the factory. Even with all OEM parts and having your local Porsche dealership handle the instal, it would still technicaly be considered an aftermarket modification.

I mean anything is possible with enough money, but it probably involves removing the HVAC box which means removing the dash and nearly every interior part. Why do you want an ionizer so bad? My last 971 had it and my current one does not, and I couldn't tell a difference. If you have a PIWIS you could code the button into the PCM if it makes you feel better maybe.
I have an ionizer in my 2019 and honestly couldn't tell you if it is on or off without looking at the display. I notice no difference in air quality. I had even tried running for a few weeks with it off as the default and then back to on for a few weeks--damned if I can tell the difference. I wouldn't spec it again in another build
