Full leather Agate grey and Saddle brown interiors are also available from october 2014, as are two-tone Agate grey-Pebble grey and Saddle brown-Luxor Beige interiors.
Other "exclusive" options like several leather options and paint options (rear spoiler?) will probably show up in the configurator soon. One thing is for sure, the configurator is far from complete at the moment.

According to the German pricelist in PDF, Sapphire blue will be available from october 2014, together with another "special" exterior color named Impulserot metallic (Impulse Red metallic).

Option packages are country-specific so that comes down to Porsche North America I guess.
The Sports Exhaust is normally an Exclusive option in the configurator, so I guess that it will show up in the upcoming months.
At the moment, there are only Exclusive options available that are suitable for all cars (leather pouch, painted key, colored seatbelts, etc.).
Normally the U.S and German configuratios are the ones where new options show up first, so I guess it all needs a little bit of patience.

Any chance that the S already comes with sports exhaust? It already comes with the dual sport tail pipes. I just noticed that you can listen to the exhaust sound on the configurator. Just click in the speaker icon on the middle right. The S exhaust sounds sportier than I would expect.

The optional sports exhaust system provides an even richer sound. The twin tailpipes made from chrome-plated stainless steel – available in Silver or Black – are both an acoustic and a visual highlight. Optional for the Macan Turbo and Macan S.

I wonder if they've changed the packages in the last day or so.
I get more options in the Premium Package that listed above. I get a savings of $1290 for Infotainment, savings of $535 for Premium Package, and savings of $680 for Premium Package plus.
To me it doesn't look like Premium Package Plus includes the items in Premium Package. It looks like a completely separate package.
My problem with these packages are they include stuff I simply have no interest in getting such as Park Assist, Rear Heated seats, Ventilation Seats, Porsche Entry and Drive. For me I'd rather pick and choose what I want than get stuff I don't want for fairly modest "savings".
My bigger problem with the configurator is the stuff that's not available now like the metalic blue that they have shown the car in, or the light grey interior.
