Took delivery of a '24 Macan S last week - in my relatively brief time with it I would say Sport Chrono and adaptive air suspension w PASM are must haves, really glad i ticked those boxes. Putting the car in sport plus, the car lowers noticeably and just hugs the road, and the PDK comes alive, it's a lot of fun. I use the mode selector dial from the sport chrono package all the time and I like the add'l individual setting. All the other stuff is mostly fluff, but get these 2 options.

Not sure of all the potential options on the newer Macan. But I will say when I went through this exercise back in 2018, I had four mandatory options: Had to be a Turbo, had to have 18-way seats (I had tried the 14's and then the 18's; chose the 18's), Chrono Pkg and NO trialer hitch. If I want to tow something, I'll rent a big truck and tear up someone else's vehicle thinking both long term in keeping this beauty for several years as well as the cost of having to replace the PDK out of pocket.
What I found off a showroom floor in Ohio in August '18 was so much more than I could have hoped for as well as having all the options I wanted.

If you're looking for a car with a comfortable ride, great sound quality, and plenty of features, then choosing a car with the Premium Plus package, air suspension, and a Burmester sound system is a great option. I personally like 14 ways better since I feel it's more comfortable for me. Premium Plus is practically a Porsche tax. I need the vent seat and if you are in the cold i'd suggest the heated steering wheel since it's only $250 or something.

I am considering the 18 way seats on my 2024 build and my dealer is telling me that they can feel confining. Unfortunately there is not a vehicle in stock with them to try out. (in the process of looking at other dealers in the area to see if they may have)

In my opinion, the “must have” options on an 2025 Macan S are SE, SC and AS because these options best separate the Macan from all its biggest competitors in the segment.
For example, I DD a 2022 X3 M40i one of Macan’s biggest rivals. For as great as the M40i is you cannot option in SE, SC or AS. These are the critical options that sets the Macan apart and puts it on a higher level. Whether it’s $25K better is a whole other topic.

If it's wife's car, panorama roof, LCA, surround cam, Bose are must in my opinion. And she may prefer 14 way seats over 18 ways since it's much easier to get in and out (and comfy). Lightly optioned S will get most of your money back when time to sell.
But I you like 18 way, air suspensions, sport chrono and sport exhaust so you can enjoy when you drive, just like others recommended, get GTS, you will have much better resale value over having same options on S models.
I personally have Macan T as daily and I'm totally fine with power, 8 way sport seats (same desiign with 18 way but less adjustment), PASM, sport chrono, nice wheels, dual exhaust tips came as default. Color matched side blades were no cost option. Then I added LCA, surround cam, Pano roof, Bose optioned for daily use. I didn't care for sport exhaust since on performance gain and dont really care for nice sound on this small SUV (with 2.0 T engine). Dealer added roof rail and smokers pkg but still it came out 73.5k and with discount, it came out 67.9k. Quite happy with it and with minimal but all necessary options (for me), Im sure I'll not lose too much 3-5 years later. So something to think about.

After considerable back and forth we ended up going with a Macan GTS.
It's a dealer ordered inventory car and checked most of the boxes we wanted, missed a few but c'est la vie...
