Drifting
Driving Event, aka HPDE (High Performance Driving Event). Basically a track event with instructors and run groups to separate students from novice to advanced. Look at Edge Addicts and Chin Motorsports for CotA. PCA and BMWCCA also run it, but much less frequently. Or Harris Hill is an outstanding track for a novice to learn on (CotA is pretty hard because it's designed to be), but they focus on being members-only, so they don't allow too many events handled by outside organizers open to non-members. Outside of Austin, I've run with The Driver's Edge and had good experiences with them.

There are several clubs that have HPDE (High Performance Drivers Education) programs that will arrange for a 1:1 instructor to be with you for about 4-8 hours of driving time over a weekend. There are about 30-40 cars on the track with you at the same time, of similar skill level. Your car insurance policy is unlikely to cover these events (or driving on a track for that matter), so you will need supplimental insurance from groups like http://locktonmotorsports.com/product/hpde-insurance .
