Roll mode = ?
Does anyone know what this part of the owner's manual really means?
There is no other mention of it in the manual. Given that it's the yellow ABS and yellow stability control telltale, I'm wondering if it's a copy/paste error from maybe the Cayenne that has an off road mode that affects the brake controls systems.

It's for the chassis dyno and to tell the DME to calm down and not start flying off the handle when it sees only 2 wheel speeds as opposed to 4. You can't turn it on yourself and if you could yo would lose all PSM, ABS and biasing. It's very helpful though for dynoing PDK cars. I saw it used once overseas.

PDK cars require something if they aren't on a 4 wheel dyno. A manual car will throw codes on a 2 wheel dyno but those codes will clear after the next few ignition cycles. This is something needed only if you can't get your hands on a 4 wheel dyno and need to dyno a PDK car.
