I really like the mahogany metallic, red, and the peridot green others have mentioned. But I also like the meteor grey for a clean look, although it's certainly not as rare as the others mentioned above.
I'm also becoming a fan of white... I'm currently driving a white Macan GTS as a service loaner with all the trim, emblems and lights blacked out. That's a nice combo too. Gets quite a bit of attention and positive comments.

No color shows off the sculpture of your rolling art better than silver. Look at how many concepts and new editions come out in this color and for good reason.
Plus, it hides the dirt better than most other shades.
You say it's boring? Then I say you're looking at the paint and missing the sculptural artwork beneath.
But that's why they come in more than one color... buy what you love!

All kinds of colors get used for concept cars. I don't recall there being any greater percentages of any one color over another (but I've got no numbers, and really wouldn't care anyway).
I'd venture silver being used says more about being neutral, or being one of the most 'forgiving' metal looking paints. Best to focus on the 'design' of the vehicle, without having a color influence the initial impressions.
Personally, I've never liked silver or gray on any vehicles but I certainly wouldn't begrudge anyone else from choosing it.
As for Peridot green, yeah, in person it's pretty impressive and somehow looks better than pictures. It wouldn't be one of my choices though as that hue of green doesn't really work for me.
Curious, I don't see Sapphire Blue or Peridot on the Cayenne configuration web pages. I know I didn't pay for 'paint to sample'. As if I had it probably would have been using the medium Night Blue they use on the Macan. I had an old BMW in that color and loved it. But there's only so many PTS numbers available each production run, from what I understand.
If I lived in a warm coastal city I love Miami Blue on a 911 Targa. This one was on the floor at PEC Atlanta:

But I'd take your sapphire blue GTS in a heartbeat! That's damn gorgeous and very similar to exactly what I built on the configurator a few days ago! Well done!
