Oil temperature gauge problem

I have the problem that my oil temperature gauge no longer works properly.
The display stays at the bottom when driving warm.
If I switch the ignition on and off later when the oil is warmer, the display jumps to the temperature value reached,
But it stops there again when you continue driving.
Later, when the oil is really warm and I turn the ignition on and off again, the display returns to normal.
Strange electrical problem, i.e. when the ignition is turned on and off, the display gets a different signal than when driving.
In principle, the possible cause for me would be: temp. sensor, cable, display. I'm ruling out cables for now.
Anything else as reason ?
