My challenge is those big Turbo S brakes. Nothing shy of 20in will clear them, otherwise I'd go much smaller with the rim. I doubt I'm going to do much off roading, at least not anything more than a gravel track, that's what the locking 4Runner is for. The reality is when I got the Cayenne it was a concession that I don't drive off-road as much as I think I do and I want unparalleled on-road experience. Not track either, since I've got another vehicle for that too, just nice comfy and fast on-road driving with at least a hair more luxury than my Toyota or Subaru. The Conti all seasons are probably fine for me, I just can't wrap my brain around that much weight on that little sidewall, and I'm so much better versed in understanding SUV-style driving on taller LT style tires like All Terrains.
19" will fit no problem. I am running winter set on 19".
I used to run 19" but switched to 20" and 275/45 R20 (q7 size). Works perfectly.
I wanted to go 20" but smaller the wheel and narrower width is better in snow. I had 20" winter tires on my Range Rover Vogue and even it is one of the most capable SUVs out there I had problems on terrain where I didn't have before (when I had 19") on same road and conditions.
'08 GTS here, I just went to the Conti DWS on my factory 21" wheels. So far no complaints. I did it because I tow a lot in the summer and didn't want to eat the Michelin. I commute 60miles a day and don't mind the characteristics at all. Sure, not as grippy as the PS but honestly how often are you track racing the cayenne aside from an aggressive off/on ramp - which still feels fine? I also like knowing i can push the 21s later in the season and not have to worry about winter weather in MA. I got stuck driving back from the airport after a work trip in a freak, late fall snow storm on the Pilot Sports and almost crashed numerous times. Never again.

Keep us posted on how long they last- they're on my list of all season considerations along with the Michelin Pilot Sport A/S3+... I like that you use the GTS as a daily... makes for a fun commute!

If i get 2 years out of them (with using winters in winter) I'll be happy. GTS is a great daily with 2 small kids, I just wish the transmission was more aggressive. So slow to react when not in sport.

If you have never turned PSM off while driving, give it a try. My '09 Cayenne S is far more responsive when I do that -- even moreso than when driving in Sport mode.

I'll try that I just wish it wasn't so lethargic in normal mode.
Should you buy winter tires - if you drive in the snow frequently, obviously yes. But living in Massachusetts most my life. if it snows too hard most people just don't leave the house. I've survived many winters on all-seasons.
