Air suspension cayenne with brakes small enough for 18" wheels with 265/65/18 off road tires and you should be good. See how mine did:

The traction control system makes good use of the open front and rear diffs, but it's still not as good as a real locker.
i likewise recommend a factory tow kit for rear extraction or mounting a rear winch. Wiring can be run from the battery under the driver seat, through the channel that exists in the passenger back footwell all the way to the area above the back left wheel, then out the bottom of the car.

The only limiting issue we have had going off-road is the approach and departure angles. Due to this, a Cayenne will never be a rock climber or into deep mud holes. (Not interested in doing either) Realizing the approach and departure angle limitation, we have taken ours beyond just the groomed flat dirt roads on to some technical trails. The only time we got stuck any other vehicle would have had issues too. This was when we got high centered in snow where none of the wheels were touching the ground. Skid plates protect and also make for a great snow toboggan!
The fuel range of the diesel is great, got up to 765 miles indicated. Big down side to a diesel is that we are limited to driving in North America due to the required ULSD fuel. Caveat to this is that there are some places in NA where ULSD is not available, for instance last winter we saw a 4'x8' sign in Coldfoot, AK warning us that ULSD was not available north of there. Running out of fuel north of the Arctic Circle in sub-freezing winter temps plus wind is never a good idea! --- Note that we have modified our Cayenne some to protect the body:

If dimitrig requires a rear locking differential, it's far easier to find a 958 with PTV+ than it is to find a 957 or 955 with the off-road tech package. Stone guards and the VR2 off-road protection option is also easy to add to 958s. I've even seen some 2010 Transsyberia models without PDCC meaning they didn't have the detachable sway option.

I have a 2009 Cayenne Turbo. It has limited slip. I want to be able to do some light offroading (definitely no deep mud or rock climbing). I heard on this site that skid plates are available. FWIW, the dealer told me that skid plates are not available....I am not sure the service advisor at the dealer fully is up to speed. The same dealer owns a BMW dealership next door, and it seems to be the bigger outfit and where the service advisor spends most of his time....

So, you too can download the Parts Katalog from Porsche, and look up the parts, and order them. The underbody protection parts are certainly available: engine metal panel 955-504-235-01, rock rails 955-559-553-04-4W9/955-559-554-04-4W9 or running boards 955-559-847-04-4W9/955-559-848-04-4W9 ... there are also stone guards for the rear suspension arms, rear suspension carrier, rear differential, and gas tanks; option I6EB/I6ES.

So super old thread I know.. But I have a 2005 Cayenne Turbo with off road package ( sway bars and locking diff etc etc ) great condition.. available now for anyone!
