I bought a 2007 facelift Cayenne S 3.6 in lovely condition for ok money but the one thing that bugs me about it, is the interior seats. They are very bland and plain looking but then I saw a GTS for sale in the UK which had more of a bucket style set of seats front and rear... I take it that these were optional? Or did they get fitted to specific models? I might try and find some for mine and swap out the bland...
Also, would a 2012 set if seats fit in mine? I'm fairly handy and have done some swaps in the past with BMW seats...

Don’t know about 2012 seats but what you were admiring are sport seats. I believe, and will no doubt be corrected, they were optional on the V6 and S while standard on the GTS and turbos. You might be able to find a set at a breaker/wrecking yard or post a WTB in classifieds
The GTS has unique seats in that they usually have Alcantara center sections, which I personally don't like as you can't wiggle around in them to adjust your position slightly on long trips, and they're harder to keep clean and looking good. Another seat type was the supple or ruffled leather option which makes the seat leather softer and more comfortable, which is what I have in my turbos S.
I have the gathered leather seats as well in my 2009 CTTS. They are not supportive enough for the corning this monster can do with PDCC and I wish Porsche had offered a sport seat version with leather rather than Alcantara. I agree with Pete above that the Alcantara can be very uncomfortable on long drives.

Porsche did offer full leather sport seats but it appears to be a rare selection.
My 2009 Turbo S has bi color seats in black with grey leather perforated center sections.
