Its awesome to have track buddies with all the cool ****.
I'm a semi-minimalist. But kinda like Audipwr have every tool I need to basically disassemble the car. Just not in a convenient place. And more often than not I'm using the tools on someone elses car :-) But setup is take car off trailer and setup my folding chair.

If you build one keep it low. Two or three is better than one big one, unless you travel with a crew. High CG will give you several terrifying moments when you get on anything but very level smooth concrete. If you have a flat load like a Level Lift lift gate not as big a deal but when it gets rainy and slippery on a ramp you better keep a lot of young helpers close by. In the film business we load unload every day out of semi trailers. Even my four foot tall mobile Lista cabinets can pucker you up when they weigh 500 pounds and you do not...

All I'd say is trailer packing and load out is an iterative process - before dropping 15k on a cart id try the usual club racer / DE solutions as they work pretty well

If you build a tool cart that weighs 800-1k lbs, have a 2" trailer hitch on it and use a quad ATV to move it in and out of the trailer.
That's what we used back in the day, like 15 years ago, in Grand Am Cup. We had a custom cart with tools, nitrogen bottle, wheels/tires, for hot pit lane, and used also in paddock. Definitely worth the effort if you need it.

There are good deals on Listas from Joe at motorheadextraordinaire.com as his junk yard specials. Most are overstock from the factory or some are shipping returns from scratch and dent. We use them in our set trucks also. The only odd thing I find is many of them auto lock bouncing down the roads. But the better cabinet drawers are rated at 440 pounds each. I have seen them used as instant ladders when in a hurry...

I use a snapon box bolted in my trailer and use a 3 draw roller cart in the pit. Even mechanics at shops have a larger stationary tool box and use a smaller roller cart to work around the vehicle.

Update,
Ordered some Misc items:
LED light fixture that will go in gooseneck area,
2 way bottom mounted sliders for the generator box; will be making some adjustments of how ATC layed out the cabinets.
actuators to open/close foot step for trailer. make life slightly easier.
working out w/ a company on the electric cart base, which includes batteries, drive, controller, base.
