Thanks for all the advice.
So here is what I've decided to do:

Fix oil leak
Pin coolant pipes
Sharkwerks metal elbow coolant lines (if they are open this week to obtain them)
Coolant hoses and some cooling system gaskets.
Coils and plugs
Expansion tank
Serpentine belt
Fuel filter

Things I'm not doing:
LSD is Guards and does not need anything.
I have the expensive hydraulic Porsche engine mounts so nothing to do there
Water pump and thermostat can be done with engine in, so not doing those
Rear main seal, would cost another $300 and has not been a significant problem
Variocam - there was an issue with the bolts early in the car's life and prior owner did a major repair with new heads and variocam stuff so not doing anything there.

Hopefully I'll be good for a couple of years ...

all good things, but having done a 996 water pump, it is a bit of a chore with the engine in, easy as pie with the motor out. Have fun, you should be all set for miles and years.

all the best...

Good list. Most importantly, have your shop go over every nook and cranny and address anything else they see. I also had my engine washed down while on the stand (all hoses and 'holes' plugged!!!!), many of the o-rings, seals, clamps, and hoses are small $ in the scheme of pulling the engine again to fix something. Assuming your shop is familiar with these engines they'll know what the problem children are.

Once the engine is out, the majority of this stuff is inconsequential effort.

unfortunately for me, i had the oil pressure sensor go bad on my car a few months back and that $150 sensor cost me 10x that. ugh! And since i had addressed all these other issues a year ago there wasn't much on the list of things to do. double ugh!
