Can I drive to the track on Hoosiers? If it rains will I just instantly fly off the road?

Depends on how fast you are driving...you'll either fly off the road or just guide off of it. Give the RS3s a try, I found them to be pretty good trackable street tires.

MPSS have an extremely soft sidewall and really need to be in the 36 to 38psi hot pressure. Yokohama ADO8 or the new AD08R work well for street tires also.

Hankook RS3 works great on track for a street tyre and not greatly affected by heat so they don't tend to get greasy... Not sure if they do RS sizes. Agree regarding MPSS requiring higher temps than that, like 38/39 hot... They'll be greasy on the first track day but better on subsequent days once release agent well and truly gone or at least that was what I found.
