Stock seats are much more comfy....why move to a less comfortable seat if you don't need the safety aspect?
Weight. And, I would not be so sure that the stockers are less comfortable. The best long distance seats I have ever sat in were in my Lotus Elise. Talk about a thin, no padding, no adjustment seat. But it just so happened to keep my back in the proper position, they are the only seats that I have ever used in the past 10 or so years that did not cause me any lower back pain over a long distance drive.
If the GT3 seats truly save at least 60 lbs, then they are well worth it. Again, even for the street, a diet of a couple hundred pounds, 60 or 70 of which is unsprung, rotational, or both, is something that can be felt and enjoyed.
