While not replacing my pads until next week (still waiting on them), I had the rear wheels off the car today (cleaning out all the grass and mud from my South bend excursion last weekend at VIR) and noticed there is no bolt on the top (like the fronts) to remove and then slide the pads out. Anyone know the method for popping them out? Thanks.

Noticed that when I saw a gt3 on a lift. There is a solid bar that cannot be removed ??? It looks like the whole caliper has to be removed to replace the pads. Very strange.

From the "Service Info Technic Intro"
Rear Axle Brake
.....To mount the "pulled brake pads" and increase rigidity, two additional bars are fitted over the brake pad slot.
The brake caliper must be removed to change the pads

Odd indeed. The new 997 rear pads have 2 loops on the lower portion of the pads, same as the 997 Cup. The pad is installed so the locator pins (affixxed to the caliper) go through the loops. The 996 GT3 rear pad sits on the locator dowels, never had any problems with this set up and the accessbility made pad changes faster.
The 997 will require removing the rear caliper to change the pads out. It's advised to replace the caliper bolts during each caliper removal, although they can be re-used for a second time if necessary.

All the newer Brembos seem to have an upper bridge on the monoblocs to increase the rigidity. So yes, removal of the calipers to change pads will become more prevalent.
