I've now driven both on the track, but not in a GT-3 of course.
Redheads are very good really and perhps all you need. The pedal stays like a brick with PCCB's all session long.
When you start going deeper and deeper, you know, the 3 marker works good but if I brake at 2 1/2 maybe I can carry another 2-4 MPH out, nothing like PCCB's to make you feel comfortable trying it.
Also I can tell you for sure, with my quite a bit heavier 997TT coming in behind GT-3's at similar entry speeds I can brake later and harder than Redheads. But many things go into fast turns, line and exit spped are king, late braking is icing on the cake.

Brian Cunningham (PDE Instructor) told me that they have to replace pads (red brakes) on the Carreras after 3 driving days. However, they only have to replace pads (yellow PCCBs) on the Carrera S' once per year! Couple that feedback with the superior/linear feel, and I would definitely go with the Gen II PCCBs on the 997 if you plan to track the car at all...
Otherwise, no need... Also - I would recommend the thicker steering wheel...
