Looks like a lilac or Saab's old Rose Quartz. Definitely looks like it has a hint of purple in it.
Regarding the S question, what color are your calipers Ss came with big reds or could be upgraded to yellow PCCBs), what's written on the airbox in your engine bay, do you have PASM (button with a damper graphic on it in front of the shifter). None of these by themselves would necessarily make it an S, but added up together if you have all of them, it's probably an S.

Looks like in the top corner of the window sticker you posted, it says 3.6 liters. That's not an S, which would say 3.8 liters.
