Default Can you repair seats?

Looking to buy used 2009 S, does stitching need to be replaced or trimmed and any idea of cost?

that looks easily repairable.
will need a deep clean.
stitching trims easily with one of those lint shavers. Saw it with my own eyes.
then some die for the scratches.
no idea on cost but figure a few hundred by a pro.

A good upholstery shop can make that look like new again.

I had the entire seat bottom recreated on my olde benz for $290. A good trimmer will source the correct leather or reconstruct yours re assemble.

Do the seats need to be removed from the car in order to repair them?

Short answer no, but its easier for the trimmer and you if its removed. its a 5 minute job; move the seat all the way forward and undo the back bolts. Now move the seat all the way back back and undo the front bolts. Tilt the seat foreward and undo the electrical brackets. Lift out and deliver to the leather guy. Now your car is safe and sound in your drive way while your seat is getting some love.
