I live in NE Ohio, always drive the car after washing in the good weather, but in the winter, washing not possible
I have owned BMW's, Lexus', Saab's, Jag's and other cars and never had this problem with any other car.
Should I fight Porsche on this to get it covered?

I don't know how you would fight them. It is an 07 and involves brake rotors. You have to think that this is related, at least in part, to the rotor sitting w salt on it (not implying fault on your part). If your request for goodwill assistance has failed you may be stuck w it. I'm wondering how others in your neck of the woods avoid this. Or do they just garage it.

I tried convincing Porsche that this is not just wear and tear, but was a defect in the metal and was a safety issue, but they turned me down , I suspect because they do not want to set a presidence
Perhaps a letter to The National Transportation Safety Board is appropriate
(BTW I have owned 3 911's so I consider myself a loyal customer, apparently Porsche does not agree)

Up here in the northeast, if you do not drive a vehicle very much the salt will eat away at the rotors. Once they pit they are usually shot. No manufacturers that I am aware of covers rotors for this issue past 12 months/12000 miles. It's part of living here.

This is part of the reason that Porsche invested heavily in the PCCB option for their cars. In nasty salted areas the ceramic option helps considerably. I doubt that you will gain any ground with Porsche on calling it a defect.
I have noted that their rotors are built like they used to be--I never had to replace a rotor in my life on any of my Porsches. And those cars had in excess of 100,000 when I sold them. Today's iron is too mild in my opinion.
