Had PSE retro-fitted, what do I unplug for ON ALL TIME?

Porsche changed all of that since the 996. That's not going to work for the 997 PSE. Just pull the plug on your 997. (For the 996 there was a workaround that involved some minor electrical changes).

Recall that Swiss noise abatement laws dictate a quieter exhaust between something like 45-75 kph.
