My 2002 996 cab tip had something similar. I am not sure if it was call a "drive off assistant". I don't remember it being intrusive to driving back then for some reason. Its another story with having it on a 997.2 6 speed. It is very intrusive IMHO. It is noticeably annoying when I drive the 997.2 shortly after driving another 6 speed manual cars without the "drive off assistant". When I first noticed it, I was on a fairly steep hill. I hit the accelerator and the car did not move forward. Suddenly the car takes off (launched off).
I think it will be less annoying if I drive just one car with the "drive off assistant". If you are switching from on car without and another with the DOA, it is very annoying. I tried to turn it off but my service advisor tells me its not possible.
