On the second question, look for threads on 06 updates and so on. Many guys on the forum know these cars inside out and there were some minor updates in 06 which they have posted quite a bit of information on.
Welcome. Please run a search on this subject, something like "C2S track" or "C4S track" or "AWD track". We've had dozens of versions of this very question and there are probably hundreds of responses with lots of details / nuances. It would be easier for me to just say "Get the C2S, it's a better balanced, more fun car on the track - you don't need AWD unless you drive in the snow all winter long", but then you might not learn about the search and just how deep the knowledge base here is.

I get your point and it makes sense to a certain extent but is the decision really that cut and dry? Where do the improvments to the 09+ AWD system factor in, if you're only cross shopping a C2S/C4S and the GT cars aren't an option?

AWD can be made to perform very well on the track. OTOH, inexperienced drivers can develop a lot of bad habits from an AWD set up. The only concrete statement that can be made re RWD/AWD is that each will have a different "feel" to the driver. Hence, the personal preference expressed here and in the back-posts RonCT alludes too.
To the OP's question of "Which is better around the track?", the only answer is 'the one you buy and learn to drive well'! All else is academic
