Look up your state's motor vehicle code for applicable state laws.
In California you could be cited, technically, for racing against yourself or trying to best a time:
California Vehicle Code Book, Division 11, Chapter 12, Article 1, Section 23109
With a good lawyer the OP should be able to beat this easily.

Just talk to several specialists in traffic citations, and pick someone who seems professional and smart and who is up front about how much it will cost. This type of thing isn't rocket science; you don't need Clarence Darrow.

Btw, I have been many business litigations, and so I'm familiar with the court system. But I'm being cautious since the charges are severe.

This is a different beast than a business litigation -- you just need someone who is pragmatic and knowledgeable about a pretty simple area of the law. The question with Traffic Fighters (Tait & Associates) is whether Tait or someone else handles the case. You just want someone with experience.
I did find this pretty funny on Sherman Ellison's website:

Well, I bet he does.
At any rate, there probably is not a reason to pay significantly more for one lawyer than another for something like this, imo. You aren't accused of murdering a hooker you found on Craigslist ....

No offense, but your statement, " Our 997's are flashy and attract attention that cops who are probably not gonna be able to afford one on their salary appear to look for ways to throw the book. " is not true in that area (in my humble opinion). I started my career at Lennox. I don't know what agency pulled you over (Torrance PD, LASD, or CHP), but they all make enough to afford a new or used 997 (prior to their ex-wives getting a chunk).

Not sure about Cali but in Texas the charge wouldn't be a traffic grade offense (class C misd). Non-traffic offenses here are tried in higher level courts. Do not hire a traffic ticket lawyer unless it's a traffic level offense.
