would this fit a 997 turbo correctly as well?

I'm running GT2-spec wheels on my GTS with no spacers, lowered on Eibach springs and PASM:

9x19 et47 245/35
12x19 et48 325/30

You could probably go another 2-3 mm lower et in the rear but that would be very aggressive, IMO.

Would I need spacers for turbo brakes?

Depends on the type of wheels and what type of brake clearance they offer. What wheels are you thinking about?

My C4S (.1) has 8x19 ET57s on the front, and I am considering a set of used Turbo style wheels (off a turbo). The backs are exactly the same - 11x19 ET51s - but the front set is 8.5x19 ET56. Any thoughts on this setup, and if it would materially change look, handling, ride? I am new at this, and tried a few of the 'will it fit' applications, but have no conclusion yet.

Thanks for the help!

The fronts will stick out another 7.3mm compared to your current setup. Will look a little different but not much... You will perceive no difference in daily driving/handling. Its such a small change.

Consider adding wheel spacers front and rear if you want to decrease the offset further.

Thanks for the help - I am a bit confused how adding spacers would reduce how far the wheel sticks out?

i apologize in advance - I’m confused about the geometry of the wheel.

Reducing the offset (ie smaller number) means the wheel will stick out farther.

Play around on this website, you'll get the hang of it
