Default Fluids service

Just bought a 2007 997 C2S Cab (74k on the clock). Previous owner was great about frequent oil changes but no records for the last 5 years (all I got) showed any fluid changes.
So, this week my shop changed the brake fluid, the coolant, the gearbox fluid and took off the front bumper and cleaned out a MESS of debris behind the radiators and A/C plumbing.
One thing I forgot was the power steering fluid.
A- how do you check that?
B- should it also be flushed and changed?
C- anything else we missed?
