Default Oil Temp Gauge

Been noticing how long it's taking for my oil to warm up. Today I noticed that it stayed on the 150 mark for a long time then started to raise, then dropped down to 150. 10 mile drive to work, 50 degrees outside, and still not fully warmed up. My gauge usually sits right above the 200 marker.

Is my oil temp sensor going bad? No codes to speak of. Any help would be appreciated. Thanks!

I had exactly this behavior last weekend, on a long road trip. I was cruising above 100mph then noticed oil temp gauge dropping to 160ish. For the next two days it would not move much above 160 but saw mostly around town driving.On the trip back home, I noticed the gauge noticeably bouncing, like it wanted to move up to 175. On a hunch that the sensor needed more oil flow, I did a long fifth gear pull up to 120mph or so, and sure enough, as soon as I let off the gas I watched the gauge pop up to 200. It’s been fine now for 2 days now after multiple restarts

The cooler the weather the longer it takes for the oil to warm up.

I've never had those symptoms pop up in my car but I have always thought that the oil sensor is not active all the time. Sometimes, it's almost as if the oil temp is ignored while the computer is doing other system checks.

I have been thinking about it a lot while driving in traffic lately but these gauges are clearly not that accurate. They are fine enough for street driving but if I were tracking the car regularly, I would want better readings. My oil temp seems to be +/- about 20 degrees of float once warm but it seems more like cold/warm/hot and not actual temps. The pressure is similar. It'll pin at 5 sometimes even at idle to where I think something is wrong, and then the next time I am at idle the gauge will drop to about 2 and go back up while driving progressively. Both gauges seem semi unreliable. The water gauge is definitely a cold to at temp and hot type gauge from my experience.
