I've a set of 750/1000 I ran in 2005, and part of 2006. The car was pretty good on the street and track, but it was a nightmare for autocross at the local venues. You should be fine with 800/1000 for track and street.

Remember that the stock car is soft sprung, and still pretty capable on high speed tracks.

This makes me wish that I still had my GT3. Just watch your mirrors going into Snake and Rollercoaster, though.

I would love to go but I also registered @ the March PCA DE @ CMP in the E46 M3 with a few mods 10-4 on the wife also, but da*m I love VIR,
