5mm-7mm are flat and uses the cars built in flange to be hubcentric. They are to thin to make with a hubcentric lip because of this flange. So, it's not a OEM Porsche magic thing. 14mm is where it starts for the spacers to have its own flange to be hubcentric.
RUF 7mm spacers have centric flanges. The car's hub flange is actually three "tangs" that center the rim and not a full flange that is a complete circle or solid for 360 degrees. The RUF spacer has three "tangs" placed where the hub tangs are not present. Thus they are hub centric. If that made any sense!
those 7mm ruf spacers are great, but not needed. If you look at this ruf 7mm spacers, the hub still have enough "tangs" sticking out to center the wheel.

True... I always wondered if these additional tangs helped center the spacer as well and helped eliminate any vibration? I know when I went from H&R's without tangs to Ruf's it eliminated a small vibration I had. I don't want to pull off a wheel right now but I'm pretty sure my Ruf's don't have two mounting screws as yours.
